Sous Vide Chocolate Pot De Crème | Zing Cooking


This recipe uses the Zing Sous Vide Water Oven and Multicooker.
It is one of my favorite kitchen tools because it has 7 different cooking modes (Sous Vide, Saute, Slow Cook, White Rice, Brown Rice, Boil/Steam and even Yogurt!) so I can basically do most of my cooking with this guy. It also has a 6 Qt. capacity which is plenty for most family and friend gatherings. The fact that I can Sous Vide and Sear with the same machine has been a game changer.

Time to make: 2 to 6 hours.
Makes 6 servings.
Ingredients:
355 ml heavy whipping cream
237 ml whole milk
141 g dark chocolate (at least 70% cacao)
7 large egg yolks
78 ml sugar
1.3 ml salt
Equipment: You will need six ~8oz mason jars (canning jars).

Directions:
Sous Vide - 161°F - 1 hour and 50 minutes:
Combine milk and cream. Heat until steaming in sauce pan. Turn off heat.
Add chocolate and salt. Whisk until melted and smooth.
Combine egg yolks and sugar in a bowl and whisk well.
Pour cream mixture into egg mixture, whisking well.
Pour into 8oz jars and screw lids on fingertip tight. (Grip band lightly only with fingertips and allow fingers to slide as lid gets tight. If lids are on too tightly jars will crack.)
Fill cooker with room temperature water to low mark.
Set to SOUS VIDE and set temperature to 72°C.
Add jars to water bath and cook for 1 hour 50 minutes.
Remove from water.
Serve warm, or cool in refrigerator for at least 4 hours to serve cold (We recommend serving them chilled).
